| Mr. Gillian was out of Missouri and so was she, The dishes she prepared were ones he knew and loved, on the southern style. One thing he really loved was a whole apple pie, smothered in the "white grease drippings" ham gravy, all to himself, each morning, hot out of the oven, and then he would eat his breakfast. Mom didn't say how large a man Mr. Gillian was, but I assume he was FULL grown. The crews ate hearty, for they didn't come back in until sundown for another meal. This gave her the afternoon time to set up the evening meal and to peel the apples for Mr. Gillian's apple pie. It was so hot in the cook shack that she would sit outside in the shade of the building , peeling the apples so they would be ready for baking first thing in the morning.
